I brewed the following recipe last weekend.

All went well. The grains were added to the water as it came to the boil and were pulled out at 70C when the DME was added. Came out a liter short at 21L with an OG of 1.053. It was left to cool over night and yeast was pitched (rehydrated) on Sunaday morning.

Gave it a quick test this morning and it is now down to 1.015. The late hop addition is really coming through and if i brewed it again I would tone it back to probably about 5-10g (and up the 60 min hops to keep the current IBU).

Hi , i would be very careful of using boiling water when steeping your grains as too hot can ruin them and add tannins etc to your brew (bad in beer) you would be better to heat your water to around 68c then add your grains stirring well and then test temp , if you need it hotter just turn on hob while stirring constantly (don't want to scorch grains ) until you get 66 or what ever temp you wanted . You need 30 mins at that temp to extract flavours and so on . Lots of different things will happen to the grain at different temps such as 80c risk releasing tannins , once a temp is reached you can't go lower (it will have no effect) so best to be cooler and heat than being too hot and cool .

Cheers pittsy. I took the grains out at 70C. They were put in once the boiler was filled with water and the elements were turned on. When the water hit 70 I took the grains out and added the DME as I was doing a full boil extract.
 
Bottled up today with 70g sugar in 19.5L. Tasting good at teh moment, regret the late hop addition a bit but with time it should calm down a bit. I will post some tasting notes in at least 4 weeks :thumb:
