Can anyone recommend a kit to buy for adding to my boiler to allow me to control the heat output on one of the elements. basically a potentiometer style controller. Or any info on how any you home brewery builders did your element control?

Any info/help much appreciated

Have you tried using the boiler as it is? Is it too vigorous of a boil?

I built my own boiler out of 2 Wilko kettle elements and a 33 litre plastic bucket and use both elements to get to the boil, then turn one off and the boil ferocity is just right.

My PID would allow me to control the output to the boiler in this way, although that might be more complicated of an idea than you were hoping for. The added benefit of a PID is that you could use it for other things as well. I use mine for keeping the HLT at temperature before mashing in, controlling sparging temperature and for sous-vide'ing things when not brewing. At some point I plan on using it for a HERMS too.

Get a cheap PWM (pulse width moderator) from evilbay if you only want boil control.
If you want more you should consider a PID with a PT100, not a thermocouple, a SSR and a heat sink for the SSR.
