I would brew the 8 pints kits as is until you are comfortable scaling up and down recipes to suit yourself....
In terms of finding recipes, you can do pretty much any recipe you find on here by replacing the bulk of Malt bill for similar DME and tweaking it to match. You could always do a partial mash to add in the adjunct flavours and colouring.
Then its just a matter of scaling up or down...
