This is my second brew and seems to be progressing nicely. Just dry hopped @ day 11. Been sitting in the fermentation fridge at a very stable 18.5C. Just popped the side of the FV and slid the pellets in. Grabbed a sample via the bubbler bung hole and gravity is currently 1012, down from 1048. Tastes nice too. Going to gently raise the temp to around 20-21C over the next few days and then bottle next Monday/Tuesday.
The first brew (pilgrims hope) has been sitting in its bottles in the top of the fermentation fridge for 2 weeks tomorrow, so hopefully I’ll get those out and into a crate in the garage and let them cool down. Planing on trying my first attempt next weekend. Not expecting it to be perfect, as I understand the PH likes a little longer in the bottle, but would be rude not to try. 😂
That will also give me an idea of the level of carbonation prior to bottling the Cwtch on Easter Monday.
 
Day 16. Taken a sample today, via the bubbler bung, for an SG test.
Five days ago 1012. Today 1011. Bottling is scheduled for Monday.
Tasted the sample and it’s very nice. Nice and citrusy not overpowering and a little fruity to. Will certainly be ordering another of these.
 
I tasted mine a few days ago after a month of conditioning. A little too bitter but fantastic flavours and really lovely citrussy hoppiness. I read that it improves over several months so will maybe have another bottle a month for a few months. I think it’s going to be the best kit I have done so far. Certainly it doesn’t taste like a home brew kit!
 
Bottled today and in the fermentation fridge warming.
Had a little issue with the racking off into the bottling bucket. Wifey gave me a hand holding the end of the syphon in a trub filter. Unfortunately flow was too high for the filter which overflowed and there was a few seconds where a little splashing occurred while she panicked and tried to rectify the situation. Hopefully everything will be fine, although I’m a little worried of oxygenation.
Hopefully not. Time, will however tell.
