Tomorrow is the end of year blow out...always with a curry!
I'm getting ahead of the game this year and prepping today! This year's curry is lamb kofta (meat balls).
Just been to Tesco to pick up some lamb mince...they wanted £5 for 250g!! That's around £20/kg! Next to it was their own lamb meat balls,extra minced so smooth and lightly seasoned...£3.30 for 300+g so about £6/kg....where's the sense in that?
So I got 2 pkts of the meatballs, tipped them out added more pepper,chilli,grated garlic and ginger,fennel seed,cumin,garam massala and chopped coriander. Job done!
Next up..onion bahji mix...onions,gram flour,baking powder,salt,turmeric,fresh chilli and a pinch of chilli powder,fennel seed..or ajwain depends what I fancy! The lot will be put in a large bowl,NO ADDED WATER as the onions will let out quite a bit. I'll adjust it tomorrow if need be.
Kofta curry will be an onion,garlic,ginger,chilli and tomato base with added coconut milk and yogurt. Hopefully in the slow cooker so I can forget it for a while.
 
Behave yourself man! I would consider using raw turkey on the bone to cook tandoori style on the Weber though. In fact I might just do that with some of those giant legs that always seem to be in the supermarket. Marinade for a couple of days,cut to the bone then slow cook offset on the bbq...
 
We usually have another "Christmas Dinner" on New Year's Day but going to do some BIR curry's this year instead. Done a kg of chicken tikka already (minus a couple of pieces that went to quality control 😂) and will nip to the local Asian supermarket later to pick up other ingredients
Think we’ll do the same.
