Got lots of courgettes off allotment...they can get a bit too much so googled up a recipe... chocolate courgette cake..just come out of the oven...smells great. I won't be telling the little vultures who have been lured from their Xboxes by the aroma,that it has vegetables in it...

Do you preserve/pickle any of your leftovers? I’ve seen quite a few recipes for a kimchi style veg mix with courgette, carrot etc in it somewhere
 
Last year I made chutney and piccalilli plus beets and cabbage. This year I will have loads of cucumbers..I might try pickling some with cider vinegar and some spices.
 
chocolate courgette cake is lovely - a favourite recipe of mine. Make sure you ferment/pickle some (I d a green teabag when doing a sauerkraut style fermentation to provide some tannin (home winemakers might have some grape tannin - the tannin keeps it a bit crisper and stops it going soggy.

You also got make a good batch of ratatouille and freeze it #courgetteglut

250g plain flour
350g caster sugar
1 TSP baking powder
2 TSP bicarb
65g cocoa powder
350ml veg oil
350g grated courgettes
Walnuts..I left these and put 1 TSP vanilla extract.
Not too healthy...there are slimmer versions ...

Bless auntie beeb, their recipes saved me more often than I can recall!
