I generally leave either bottles or barrels to secondary ferment at room temp (20-24 c) for 4-7 days.

Then place them in a metal shed outside on wooden shelving. Is this acceptable considering I'm relying on purely ambient outdoor temperatures?

Thanks. :)

Yes as long as the outside temps are cooler than the temp you secondry fermented at :thumb:

Oh they certainly are, indoor temperatures are between 17-23 degrees. In the shed outdoors, whatever current temperatures are, probably 9-18 degrees.

I do find that occasionally that the brews do taste better when the outside temp is slightly warmer, sometimes the opposite. :wha:
