not an expert, but i would leave it in the primary for about 2 weeks, then secondary fermentation in bottles for 2 weeks and 2 weeks in the cold...longer than the instructions but you'll get much better results if you are patient

I started my mexican last Monday and racked it off yesterday (monday 28th) SG down to 1010 leaving it until friday before I put it into a keg, will be leaving it for 4 - 5 months before I try it, Last year I did muntons mexican and found it to be very good after about six months. If you can save a few bottles until August then you can see if it gets better,
