By carbonating the beer inline with CO2, post filter, to a measurable Volume of CO2 (Anton Parr sensors give the feedback usually) then transfering to a Bright beer Tank ( a big stainless pressure vessel).
They then Bottle using a large inline counter pressure bottle filler, cap, then, send to the shops.
