Hi

It all sounds right as long as you sterilised everything.

When it stops fermenting you will need to check the taste and may need to adjust sharpness (using malic acid) or sweetness (using sweetener-not sugar).

Then you need to decide whether to bottle or barrel.

Then comes the tricky bit- patience- leave it for a few months (barring a taster or two)

What do the tea bags do? I've got some wine on the go made from supermarket apple juice, it's just juice, sugar, water and yeast! Will it matter that I didn't use any teabags?

T-bags add tannin and are an easy way if you don't have any grape tannin.
The tannin just adds a bit of "taste", so don't worry that you haven't added any, it can always be done in retrospect.

So if I have a little taste during it's first racking, and top up with a little tea if necessary, correct?
