coolio tubby-shaw

I'm looking to produce something around 7% fairly clear with some sparkle - what would you suggest as regards quantities?

Fermentation Bin 25lt
Litres of AJ to ferment?
OK here goes, I would ferment 22L with Youngs cider yeast
I would then use another litre to prime with :thumb:
If you have a Farm Foods shop close to you you will be able to pick up 1L cartons of apple juice @2 for a £1 :D
This juice will give you on OG of 1.055 ish which should ferment out to give you an abv of 7.2% without the need for any added sugar ;)

Also, what would be the optimum temperature to ferment at?
Ferment it at 20C :thumb:

Yep Riverside ;)

Tubby sorry to be a pain but i need some advice on which yeast to use on my TC. I know you have mentioned several times that cider yeast is the only yeast to use for making cider and you recommend WLP775 and have also mentioned Youngs cider yeast. However, it has also been suggested that Nottingham yeast makes a very nice cider :wha: I know i am a philistine but i am wanting a medium sweet cider for the wife...what would you recommend??? :hmm:

Ok, just started drinking this :thumb: absolutely spot on

I used 25lt apple juice, 500grams granulated sugar, youngs cider yeast.

Fermented at 18-20degrees

This started off at 1062 and ended up at 1005 after about 8 days.

I added another 2lts of apple juice and 100gms of sugar then syphoned into the keg, excess went into five bottles. So even with this apple juice added it was still probably around 7% ABV

It was totally clear after about 7-10 days :thumb:

Sparked open the first bottle last night and poured into a glass, stacks of fizz and really drinkable, not too dry - even the wife likes it and she doesnt drink anymore after her last episode with cider

Thanks everyone for your advice :thumb: I'm gonna start another batch asap, maybe go a tad stronger this time :drink:
