I borrowed an apple press and ended up with 23l of pure juice which I fermented with some cider yeast - when fermented out it was only about 3% which figured as the OG was 1.042. I added 250g sugar and fermented again. Its currently in a barrel charged with co2 and I need to work out what to do next.
1. kegg it to add co2 then bottle (a bit dry and sour)
2. Kegg add co2 then bottle with some sweet applejuice (a bit weak in alcohol)
3. bottle it with some sugar (might ferment again and explode) - or use lactic acid but that might taste awful.
4. bottle as is then add sweetener before drinking (possibly OK but not good to give out to neighbours)
this is my first attempt at cider after several yearts of beer brewing and I'm keen to avoid souring due to oxygenation.
