HI all
I want to brew a chocolate flavored stout but not sure how to achieve this.
I have brewed stouts in the past successfully using SAMSONS IRISH STOUT malt extract with dry dark spray malt.
What i really need to know is when to add a chocolate flavor ie before fermentation or arfter.
Also what type of chocolate flavoring,a syrup or somting else.
Sorry to keep going on but also what is the best yeast to use in a stout.

I would steep some chocolate malt at about 66 deg C for 20 mins. Strain and rinse (sparge) it through slowly with the same volume of 66 deg C water. Add this extract to the recipe.

I'd probably start with 70-80g of chocolate malt in 4 pints of water.....and rinse through with a further 4 pints of water for a 5 gallon brew (total volume).
Adjust amount of grain used in next recipe to taste if required.
