Remember your wine FG will be close or even below 1.000 (some recipes quote 0.995)

Makes no difference. That is about the fermentables present.

Also consider champagne bottles. Easy to find and take crown caps (although slightly larger)

So I did a double batch of the recipe I got and used my 25l fermenter. Racked it to 2x 5l water bottles. OG was 1.082 and 1.002 tonight. Only transferred it 2 hours ago and it's bubbling away again. I thought it would slow down a fair bit now with that reading. It's very hazy but I'm sure that will clear up a bit.

Fizzy. I've got a load of Magners Irish cider bottles from before I started kegging so I'll carb it up to 3 volumes (gone that high with them before).
Maybe a silly question... Is the sugar calculation the same for wine yeasts?
