I have been given a cypher plastic cask and shives etc and would like to have a go at serving one of my beers from it. From what I can tell you rack the beer to it before fermentation is over, but how much before? Are there any 'rules of thumb' to work to?

My rule of thumb, 2-3 mins bubble rate, normally pressurises my keg to about 8psi without any priming sugar! (assuming 23ltrs)
 
2-3 points from final gravity . . . crash cool to drop as much yeast as possible . . . Rack . . . Fine . . . Vent . . . . Serve
