I'm looking at brewing a Leffe Clone. Trying to find a beer that the Mrs will drink with me, and she's not into the punch in the face hops like me... so she's asked for Leffe.

I've found a recipe on BF, but it mentions cane sugar as a late addition.

I've not done this before, so a couple of questions spring to mind.

1.) Is just regular cane sugar from Tesco okay to use?
2.) What exactly is a late addition? How late is it added? (which step of the brew day?)

Cheers
Jon

1. Yep.
2. Usually added towards the end of the boil, around 15 mins from the end. Add it slowly and stir it in to stop it scorching on the element, or better yet take some hot wort (if you can do so safely) and use it to dissolve the sugar before you add it.

Late addition is also the point where flavour items are added, like some hops, orange peel, whatever. Your sugar would dissolve even when added 5 minutes before flameout, but 15 minutes also sterilises it a bit better.
