Quick question:

How many tablets should I be using in a 5 gallon beer kit? I'm sure I read somewhere that it's 1 per gallon. I only used 1 in my last kit and none in the kit before.

One per gallon in winemaking, at the start to knock out wild yeasts or at the end when racking.

For brewing, if using for water treatment to get rid of chlorine and chloramines, one tablet will treat 10 gallons.
 
Would there be a concern for adding too much Campden? My HLT doesnt hold my full liquor volume so I often pop one tablet in each filling for sparge and strike liquor ~40L total?
