Had all week off work and wanted to get some brewing done but deliveries have let me down. So got all stuff together to do my irish stout but only got californian common yeast. Normally use S04. What's people's thoughts ? Normally I'd just do it and see, but with it been last brew before Christmas wanted it to be decent.
 
It’s an ale yeast so should be ok.
I thought it was a lager yeast that ferments at ale temperatures? I've never lagered anything and I used it once in an experimental ipa and it weren't nice. But I'm not sure if that was my fault or the yeasts.
 
There's currently a winter swap going on for Tropical Stout. That style is fermented using lager yeast at Ale temperatures. I used MJ California Lager M54 yeast in mines and its turned out great. Go for it!

Thanks Begbie, did you lager it for a few weeks or just treat it like a normal stout?
