Hi new to wine making have made kits turned out ok but a bit thin. Have just started a herbal tea bag wine and the neck of the dj is full of brown gunge looks like the yeast collected at the top this didnt happen with the kits is this normal? i have taken the bung out and gave it a clean then put it back i also gave the dj a shake but did not budge the brown stuff. The wine is active enough can you advise thanks

Its just yeast residue from when the fermentation was stronger thus higher up early on. its nothing to worry about. it was quite unneccesarry wiping it off. all this 'gunk' should be left in the dj when you rack to secondary.

thanks for the reply It has stopped ousing out now. Settled down to a nice steady bubble. I will have to top up now with boiled cooled water as advised elsewhere. Thanks again its so reassuring you can come on here for sound advice
