Brooklyn Lager/Steam Beer hybrid

My wife gave birth to our first 4 weeks ago, in a similar way to a brew I've done a few times that use hops that start with the same letters as my dads initials, I am planning to do a beer that the hops start with the same letters as my sons name. So EVAN.
I've had the Brooklyn Lager/Steam Beer malt profile in my brewers friend for awhile but not done a lager - of sorts before so be nice to add it to my mix of beers I brew - if it turns out ok.
FERMENTABLES:
4.64 kg - Pale Ale (85.6%)
0.44 kg - Light Munich (8.1%)
0.34 kg - Caramel / Crystal 60L (6.3%)

HOPS:
12 g - Northern Brewer (7.8 AA), Type: Pellet, AA: 7.8, Use: Boil for 75 min, IBU: 12.27
12 g - Amarillo (8.6 AA), Type: Pellet, AA: 8.6, Use: Boil for 35 min, IBU: 10.73
15 g - Amarillo (8.6 AA), Type: Pellet, AA: 8.6, Use: Boil for 2 min, IBU: 1.37
15 g - El Dorado, Type: Pellet, AA: 15.7, Use: Boil for 2 min, IBU: 2.5
15 g - Vic Secret (15.5 AA), Type: Pellet, AA: 15.5, Use: Boil for 2 min, IBU: 2.47
31 g - Vic Secret, Type: Pellet, AA: 15.5, Use: Dry Hop for 3 days
31 g - El Dorado, Type: Pellet, AA: 15.7, Use: Dry Hop for 3 days

going to use WHC Lab - Ubbe - Kveik as the yeast

Original Gravity: 1.053
Final Gravity: 1.014
ABV (standard): 5.14%
IBU (tinseth): 29.33
SRM (morey): 10.37

Congratulations, my little man is exactly 1 month old today!

Looks a nice recipe, it's kind of a pale ale with lager-like yeast. Should be nice.

I'm getting the stuff together for a pilsner, was considering using the urquell strain but that Ebbe strain looks pretty great.

I'm thinking I might go with a SMASH pilsner with Maris Otter Extra Pale and Saaz.

To you too, ours would be a month to the day on Wednesday. probably abit mad trying to do a brew but hes on the **** and the wife said that should do a brew and tbh ive been wanting to do one but have resevations how i'll cope if the little one is restless, but i can pop back and forth from the brew to check in on both. It'll probably be the last brew on the current setup as I am thinking of getting an all in one to help both myself on my brewday and also potentially help the brew family balance. Everyone still should have time for themselves and I think that is what I am needing the most.

All last year I was brewing with Kveik yeast, different strains of. I thought ubbe would best suit this style of beer. The last couple of brews I've just used the Lemmand dried Kveik which has worked out quite well but this time around wanted something more specific to the style. I use Kveik now as my go to yeasts as it just suits my setup.
 
Have you used the Ebbe before? I'm hovering over the buy button here.

I have a Robobrew all in one and I love it. Even before the kid was born I was splitting my brew days up like this:

Day 1: I'll finalise the recipe, do any last minute cleaning and prep of the garage area, crush grains, measure my water into the sparge tank and the Robo and do any water treatment necessary. Then I set the timer on the Robo to heat the water for whatever time I want to get started the next day.
Day 2: I'll do the mash in as soon as I get up, and once that's done I [Edit: boil and] put it into a no chill container and tidy up what I can manage.
Day 3: Finish tidying up, transfer it into the FV and pitch the yeast.

It works perfectly for me and I'm only using 2 or so hours per day (or less), rather than like 6+ hours on the one long brew day. Day 1 can be Friday night after work which is easy enough to do while having a cheeky beer or 2 in the garage!

I havent used ebbe before but Id recommend giving it a try if my experiences are anything to go by with kveik. Just a different temp control you need given it ferments high.

I've used Kveik a few times and had mixed experiences, the Lallemand Voss one is great though and I even used the 2nd or 3rd generation of it on a ginger ale which came out brilliant.

I've just ordered the Ebbe, hoping to brew it this weekend if it arrives on time so see how it goes!

Im hoping mine all arrives for then too. The ragnar strain from the same company turned out great, used it for a orange, honey wheat beer.
 
How did you get on? Did you manage to brew it?

Mine's going like the clappers as we speak. Within 12 hours it had blown out of the blow off tube!

That's awesome news!
No I haven't brewed yet. I had other things going on last weekend in the end and also had to wait till Friday to get some of the hops for the recipe.
I've also justt bought a brewmonk so will wait for that to arrive. Aiming for Fri/sat by the time it arrives and I do dry run etc
