Hello all. I've got a fridge that I use to ferment in. All has been well until I've got past the primary fermentation for the latest blonde Belgian that I'm doing. I wanted to lager it at 1C for three weeks but the fridge even on the highest setting couldn't get the beer down past 7C. It's now packed up. I'll have to see if I can fix it or replace it.

In the mean time I've left the door open and the temperature in the shed is about 4C. Should I just leave it a shed temps in the fermenter for a couple of weeks? It's already been in the fermenter for two weeks for primary fermetnation. Also do people rack off into a clean FV when lagering or is the point to leave it on the yeast cake? Or just rack and bottle as I don't think it's going to go down from 1.012?

personally for a belgian i think i'd bottle it and if it's that 7% you was doing then conditioning will need to be around 2 months before it's good (btw 1012 is about right , most mine are from 1012 to 1016 depending on mash etc )
