Brewing Theory - What does each ingredient do?

OK, I've read that somewhere else as well.... I'll drop that to 7 days then.... If I think it needs more on the second batch (assuming it tastes ok), then I can experiment.

Most of this will be experimenting with flavours and techniques I think but I'm building a really sound foundation to build on
