I thought I should have a go at some yeasted dough for a change.
Here’s my attempt at the ‘00’ Foccacia from Mastering Pizza-Marc Vetri. I hacked the starter so it could ferment overnight instead of just 4 hours.

Decided to try yeasted pancakes last night as a test (also did traditional) and had some leftover batter. So I combined them and stuck it in the fridge. This morning I realised that it was sort of the base of an enriched dough so decided to convert the batter to dough and make bread. Stuck some strong flour in, a bit more yeast and hey presto...

Not the prettiest in the world but lovely and soft and springy with a crispy crust. Nice.
