Looking at brewing something along these lines for a bit of fun -

I'd rather it be akin to beer so it ages quicker, it's got some sweetness and body, but primarily a honey flavour.
Then, bucketloads of nelson sauvin and cascade in the aroma and dry hop stages :)
Any comments?
