With my current Brewferm Abdij (abbey style) kit, I'm going to follow frequent advice on here and leave in primary for 10 days, or just over, rack into a second bucket to batch prime, and bottle immediately.

Seeing that this one is kept at 25C throughout primary, is it really OK to bottle that high? Will there be too much yeast still in suspension? Should I let it stand cool first?

25C is a bit too high for fermenting. let it cool down for a few days before bottling to help yeast drop

25C is perfect for fermenting this abbey beer, according to instructions at least and as per many Belgian beers. It's just whether I need to let it cool before bottling....

After fermenting and a diactetyl rest you need to let it settle so that the yeast drops out. I usually put it in a secondry for a week at a cool temp ie 12c. This is achieved by leaving it on a cd concrete floor in a cold room.

The yeast will drop out and the beer will be bright prior to bottling.

If you leave it at higher temps then the yeast will not drop out as much and you will end up with to much sediment in the bottle.

Thanks both :thumb:

ok I'll be guided by your experience... :thumb:

I'm sure you're the more experienced! Maybe you've had better results below the recommended 25C? I'm not going to be a slave to instructions if people on here know better!

Aleman said (generally) 10 days then batch prime and bottle, on another thread, so I was going to give that a go, which is similar to the Brewferm guidance, but maybe it wouldn't hurt to cool it and stand for a few days first. It's had 10 days so far, with the SG down from 1.072 to 1.016 by day 6. I'm not planning to lift the lid again until I'm bottling, to take more readings.
