Well as it happens for the occasional batch of home brew I do I made a cider with a kit as described but I’ve exploding bottles too. What’s the general cause?
 
My fermentation ‘looks’ like it had completely stopped. Is there another way of checking?
 
I'm surprised he has bottle bombs, there was no yeast in the bottles of beer I've had from him, they weren't live beers like we produce (no priming etc). Maybe the cider is different?
 
Apple and grape can be very different to beer. I had an apple wine that fermented for months.. Fruit wines often spontaneously start up again with the season.
 
Get a good quality wide scale hydrometer. Much easier to read accurately
And don't forget to compensate for the temperature of the liquid.
Lots of calculators on line . I use Brewers Friend.
 
Get rid of bottles and start kegging? No more over carbonation, then!

Just kidding, you'll likely still bottle from time to time. Make sure gravity is stable (and at predicted attenuation) and use a good carbonation calculator.
