Boil pot size

Would a 15 litre boil pot be adequate for the pre-boil volume ending with 11litres of wort?

Pushing it. But not impossible as I'm sure others will step in and say (maybe offering some useful get rounds?). You will experience the odd boil-over when boiling kicks off ("loads of foam"). I've seen recommendations for having boilers twice the capacity of the proposed brew length, but I think 60% over the brew length is quite comfortable enough (i.e. 18L+).

I would advise looking at a range from 15L right up. Weigh up the costs and maybe go bigger if you think there's a chance you'll want to go bigger in the future.

I went for 60L (plastic) for 25l brews due to the price difference being quite small, I thought 30L might be tight for head space and it gives me to option to brew a much larger batch if I ever need or want to.

I concur. Currently looking to upgrade size after doing about 6 BIAB using a 15l pot.

I've just recalled one of the "useful get rounds". As the boiler comes up to boil stand ready with a spray bottle of clean water. If the foam looks like coming over the top spray it until it goes back down. Such antics are only necessary at the beginning of the boil (usually!) as after the initial threats of overtopping foam, things quieten down again.

at that size of stove top brew when it comes to the boil you can simply split the brew into 2 pots and boil on 2 rings

its not so much a case of a right way and a wrong way, more a case of finding the way that works for you..
