Hi all, im jumping off the deep end again. Thinking about making a blackberry bitter. Iv'e got a cheap geordies kit going spare and loads of blackberries (left from the 5 gallons of wine attempt, got good reviews from those that had some) Anyway all ideas/recipies welcome, even silly ones!! I know they do a blackberry wheat beer not tried it tho! :cheers: just made it to shandy pants with my posts!! right im havin a glass for that!!
 
Ferment kit as usual.

Put blackberries into secondary, prob best in a straining bag, and mush. Add appropriate number of campden tablets (something like 1 for 2kg fruit, can;t remember exactly) and leave for 24 hours. Rack fermented beer onto blackberries.

once secondary fermentation is complete, bottle as usual.

i bottled my raspberry real ale about 2 weeks ago I used 1.5kg of fruit boiled for 30 minutes with a glass of water then strained into empty fv the sugar content worked out at 70g so I added another 20g to batch prime
tried one today just to see how it was doing only a slight hint of raspberry but tasted & looks nice for a beer so young might improve the raspberry flavour with age will have to wait & see
