blackberries are here. suggestions and recipes please!

Cant believe blackberry time has arrived already. Not yet in abudance here in Yorkshire but picked a couple of handfulls today along with a few of the last wild raspberries I have found growing.
So what do we do with a huge amount of blackberries? We plan to make alcoholic beverages of course. :drunk: Can anyone supply me with a tried and tested recipe for blackberry wine or blackberry and ? wine please.... ?
 
blackberry will go with most things

the most obvious one apple and blackberry TC maybe

cherries, peaches and apricots are all quite cheap now

mixed berries or cherries

possibilities are endless with the bramble :thumb:
 
D'ya think blackberry on it's own would make a decent wine? Or still better to mix something else in there?
 
Blackberry and elderberry is a nice combo, and since they ripen at roughly the same time of year they are good bedfellows. This will need a year or so before it is nice. Blackberry on it's own is dead on, nice and light and fruity and doesn't take too long before it is very drinkable. As others have said, blackberry and apple is a classic combination, if you can find some crab apples to throw in there, all the better.
 
Whatever you make ( and the good combinations are endless ) don't miss putting at least a gallon of Elderberry and Blackberry PORT down. Lots of good ripe fruit of both berries made up to a strong SG and left till next year AT LEAST.
When you drink it you will be glad you made it and left it to condition. IMHO one of the best country wines you can make.



don't forget a few pies with the fruits also......
