So would I. It's not clear from this account whether the "background" yeast is only present in the culture for the stout are whether it's part of the house strain. But either way, it's not something I would want to ingest.

Hoppy Pale Ale

4.0% vol.
White Rat
This very pale, hoppy ale is made from low colour malt. A combination of Cascade, Columbus and Amarillo hops produce an intensely aromatic and resinous finish.
Please note our 12x500ml bottles are available for delivery only.

Unfoortunately I've never tasted it, but it looks very much like Oakham's Bishop's Farewell with some additional hops.

This is my recipe for White Rat 10L
1800g Golden Promise
100g Pale Crystal
100g Torrified Wheat

7g Columbus @60mins
10g Cascade @ 0mins
10g Amarilo @ 0mins

I have used CLM House or Midland both tasted good

I’m fortunate as the brewery is close to where I live each time I visit the pub attached there’s always something new to try 🍻

Thanks Fire. Looks good-I’ll scale up to 20 litres and give it a go. What yeast do you use?
