Never brewed one before first ? do i need a fridge 2nd @ is orange peel, 3rd ? doe's look ok, going to up it to 12L and swap yeast for cml kristallweizen

11 Litres of a Belgian Witbier (Greg Hughes recipe)
1300g Pilsner malt
1300g Wheat malt
25g Saaz @ 60m
15g Coriander & 15g Orange peel @ 15m
CML Kristallweizen
OG 1052
 
I've used the CML kristalweisen a few times...is it a Belgian style yeast? I've used it for wheat beer and American wheats but nothing "Belgian".

The Wit had a FG 1006 and ABV 6.0%.
Transferred 10 litres to 2FV and cold crashing in the garage.
 
17/02/2020 brew 56 - no-gaarden - belgian wit - silver
100g tettnanger 10 min boil - 30 mins flameout
2.5 kg wheat malt extract
750g gs
2 litres orange juice asda from concentrate
mj belgian m21 wit yeast.

21.5 litres pitched at 23c
1.060-1.012 = 6.3%

made this twice it's now on my regular list.
