beetroot desert wine

hi, i am making the above wine from the the boots wine book,you are meant to tip out half the wine after 7 days to mix with one third of the sugar then the same again twice more.
can i dilute the sugar in water, then just add it a third at a time.
also which yeast would you use for a Madeira yeast?

yeah, dissolve it in sugar solution. tipping it out exposes it to oxygen.
never heard of madeira but montrachet is good and cheap.
