I have acquired a large water container from the top of our chilled water dispenser, enlarged the hole to accept an airlock, tested it for any leaks and cleaned/sterilized it. What do you suggest I make in it, I have a six bottle elderberry kit from wilko as a starter but was wondering if any creative soul out there could come up with any additions to blend with it or should I save the e'berry for later when I have a dj spare and brew my first WOW in it. The container holds 18.9 litres as stated on label. Thanks in advance.:hat::cheers:
 
Try the recipe below and make it to 18 litres to start then top up after stabilising, degassing etc.

5 litres Red Grape Juice (i am using the bottled version from ASDA)

5 litres Apple juice

4Kg sugar.

5 teaspoons tannin or some strong black tea - I used 1.5 litres in a bucket (5 teabags in a litre jug and 3 tea bags in a half litre jug)

Add water aim for a temperature between 20c to 30c.

3 teaspoon yeast. (i use youngs super wine yeast compound)

5 teaspoons yeast nutrient

5 teaspoons pectolace

5 teaspoons Glycerine

5 teaspoons citric acid. (optional)

Thanks for the suggestion Chippy, what sort of ABV are we looking at when topped up to 18 litres? Just out of curiosity, as a rule I always brew short with beer and wine so it would nice to have something palatable for the wife to drink if it is not too strong..........if it is strong hey ho the wife will go thirsty again and drink supermarket plonk/grog:drink:
 
If you make the total sugar including what is in the cartons to 4000g in 18 litres it'll be around 13%.
you could also drop a teaspoon of everything in the recipe but keep the yeast at 3 teaspoons.
 
Cheers, that sounds perfectly acceptable for us both, trawling the supermarkets for ingredients tomorrow! thanks will let you know how I get on. Just looked in the staffroom and there will be another container available soon ..........oh happy days!:drunk:
