Here we go! All Grain number two, the first being a wheat beer that got infected, doh.

I'm branching into "Gourmet Beer" this year and want to incorporate food recipes into beer. Today's endeavour;

Reminds me of a pint I had the other week. It was called Thia-bo and was brewed by Otley Brewery. It's an ale brewed with lemongrass, kaffir lime leaves and galangal. Wouldhavebeen great with a Thia green curry.

Interesting! I chucked in some kaffir lime leaves so good to know they hopefully won't be out of place. Cheers for the link :)

I seem to have an airlock problem as I'm using a 2 gallon food bucket with a hole drilled in, the water almost disappeared from the airlock so i've refilled, but it's definitely fermenting. I realise it's gonna be fine, but meh...

Fermenting away nicely with 1/2 pack US-05. Bottle Conditioning this one. :cheers:
 
IMHO I always find it better to keep these additions out of the kettle and put them in the FV after it has fermented. Extraction is a lot slower and you are able to judge better how much you need as you can taste the base beer first. If you put them in a muslin bag and check on a daily basis you know when you have got the desired effect that you are looking for.

I did a similar thing using bobek as the hop and cinnamon cardoman and clove.
 
How'd it come out? I purposely stayed away from clove as I hear its really easy to overshoot. Underdid the cardamom in the end too, don't wanna take any major risks!

Reason I boiled was somebody sent me a very good list on spices and when to add them, many others said to secondary but the flavour is said to be good in these specifically when boiled. It's all an experiment...

Opened the fv tonight and got a huge whiff of cinnamon, let's hope its good!
 
Not my most favorite of beers even though I love that spice combination in a curry or with pork and cider. I wouldn't try it again.
 
Bottled! Can't taste much at the moment due to a cold but the spices are there and my dad and mate say it's quaffable. The chilli comes out too so pretty happy, now comes the hardest part - waiting. :)

Right! Taste tested.

I will start by saying it's a lot like cake, and reminds me of crabbies! There is very little bitterness or hop aroma, so it lets the sweetness and spices shine through. I'm sure crabbies contains malt after this so there's my next project.

Spices - the cinnamon is a little bit much compared to the other spices, at least at the moment. Most others arn't particularly noticable, but do contribute somewhat, so I'd probably change the quantities a bit next time. The chilli has a nice kick but like most people say about things like this, one is definitely enough!

Overall, very pleased with it, would brew it again for sure, although it's a bit of a joke beer, it's quite delicious and will go down a treat at BBQ's in the summer! :cheers:
