My cheapo digital thermometer is not too bad. But you might be right about them in general. That said even the Inkbird I have is a bit inaccurate. And I bought a liquid in glass brewing thermometer recently to replace an old Boots thermometer I had had for years after I broke it and it was is wildly out so don't use it. But the one type I wouldn't bother with is the stick on sort, the one I have is rubbish.
I think you have to spend some money for to guarentee getting an accurate thermometer. I had a cheapo thermapen copy for a couple of years that was accurate. When it died I bought a replacement which wasn't accurate at all. I now have a spirit thermometer which I got off ebay which is accurate. I've generally found the stick on LCD thermometers fairly accurate
