Hi All

Thinking of brewing a Spiced Clementine IPA or APA for Christmas, want to get started early so if I mess up I get time for another shot.

The question I have is what is the best way to add flavour to the brew?
Do I add it during primary or secondary fermentation?
Do i use a syrup or stick in dry peal?
As anybody done something similar?

I have just viewed someone using Tea bags 5mins before end of the boil. That could be a simple and easy method. Could add during steeping as well I suppose
 
Zest instead of peel, what sort of flavour was you thinking about? I made a plum porter by adding proon juice to the secondary.

I wanted something that tastes like Christmas so I was thinking Spiced Clementine but I have seen some fruit teas that could give an interesting flavour:

Cherries and Cinnamon
Cranberry and Clementine
