The reason for my question is that it went to 1.020 overnight. Didn’t think that could happen.
Gravity varies significantly with temperature. A measurement of 1.020 at fridge temperatures, say 8C, would read 1.000 at around 70C. This is just physics.Nothing to be worried about.

Your reading of 1.000 must be a mistake. The SG can't rise to 1.020 overnight if you don't add anything. I do know from just brewing a few kits that it's easy to get a dodgy reading. When I have prepared the kit I give the mix a really good stir and then put the hydrometer directly in the bucket. Today I used a sample jar filled from just below the surface and got an OG of 1030. When I stirred again and put the hydrometer in the bucket, I got 1.052.

Don't give up on this gallon. Ferment it and pray. If it's sh2te then cut out the middle man and straight down the bog. If it's good, straight down the neck.
Beer. If it tastes good, it is good.
