Greetings,

I have finally taken the plunge and joined the forum :party: . I have been brewing since the beginning of the year as the price of wine was getting a little expensive. My first brew was a kit, Beaverdale Cab Sav, which I still like but have reduced the amount of water I add to give a better flavour. From that kit I gained confidence and with some knowledge gleaned from this site have produced some WOW variants as well as some true country wines. My elderflower 'Shampagne' was flat to start but got going eventually (once I had risked the carpets in the house). I am now waiting impatiently for my 1 gallon dried elderberry, 1 gallon of elderberry and 1 gallon of blackberry. My cranberry was ok, I had some two year old+ cranberries in the freezer and knew I was never going to use them for anything, and then the brewing came along :pray: .

Summer was passed a haze of hippy juice (Blackcurrent, genseng and vanilla wine made with red grape juce from the supermarket) and many batches of wine were produced; I fear the onset of lower temperatures and hope it will not slow me (or more importantly the yeast) down.

I have the bug bad and always feel the need to be adding to my collection. I use kit wines as my general stock but have high hopes for my country adventures. Eventually I will add a list to my signature so you can all see what I have tried and if it is of interest.

Yes, I knew the name was something from ancient history and had to go and research it.
