The 5 litres on the raspberries has gone nice and pinky and the airlock has evened out, the one on the peaches and dried apricots (rehydrated) has gone mental and is frothing out of the airlock I think I'll bottle the raspberry tomorrow then split the peach between the two carbouys to let it ferment out.
I'm guessing that there was too much sugar in the dried fruit and that a lot of the flavour may get lost?
