just knocked up a bit of turbo cider and small quant of hard lemonade


2 x 1gal cider from resco EDV apple juice & 1kg sugar each

1 x 5gal hard lemonade from 2ltr lemon juice concentrate & 4kg sugar

both using a youngs super / high alcohol yeast

1kg sugar for 5l? That's not cider anymore...
By my maths, you're looking at at least 13% :drunk:
 
The last lot ended up at 10% plus a bit from carbonation.

The lemonade will be carbonated with 500grms honey then bottled.


I can't wait.

At that then, I'm guessing that you don't ferment down to dryness. 1kg of sugar alone in a demijohn would be 11%, nevermind the sugar from the aj. Yeast permitting that would ferment down to dryness at about 15%.
 
ok

the hard lemonade has bottomed out at 990. its very sharp, so ive added canderell to taste.

going to bottle it this afternoon, and store it away for as long as i can

I left the cider in the fermenting DJ and had a look today, some 5-6 weeks later. It's very clear, very clear indeed. I plan to leave it there on the yeast till the end of the month as I'm told it won't effect the taste but as the cider ferments slowly it won't do any harm.
