    Just thought I'd update to say : I WILL be doing elderflower again. The last couple of samples have been truly excellent. :cheers: Despite being known as an early wine, it really improves between months 4-6. Oh, also I recommend decanting it - get it aerated before drinking.

    I wanted to bottle a rosehip wine but it didn't seem clear enough. I racked it a second time and noticed a lot of fizz so I gave it shake. Really fizzy! Took many, many shakes and settles before I felt it was de-gassed enough And now it seems to be clearing nicely. No idea if it's the racking...

    "Pure" wines

    I did a straight elderflower and it's good, complex, no need for raisins. I didn't use finings or campdens or stabilisers and it's still improving now at 6 months. It's slightly hazy but it really is a nice drop. :)
