Got started early this morning, everything laid out and ready to go last night! I made ginger beer based on the Fiery ginger beer recipe, but with a few adjustments this time.

2 gallon brew:
- 450g root finger, grated
- 1 lemon, 1 orange, sliced
- 250g honey
- 400g white sugar
- 300g brown sugar
- ale yeast, nutrient, 2tsp glycerin, 1/2 tsp cream of tartar
- 1/2 tsp mixed spice, 2 tsp ground ginger, 2 cloves, 1 star anise.

I boiled up the ginger and fruit in the usual way, added the sugar to dissolve, then added the honey after the pan was off the heat. The rest of the ingredients went into the bucket with cold water and the ginger mixed, then the pitched yeast. I took a hydrometer reading which came out at 1.030 or something that seemed very low, so I threw in another cupful of sugar, hydrometer now at 1.040. Quite possibly the temp might have been a bit high or the solution not well mixed so I don't know what abv this will end up as. I may add a cinnamon stick at a later stage, but didn't have one today. This probably won't be ready for christmas but we'll see how it goes!

Sounds the recipe i was looking .On a previous thread i asked how to go about brewing some Jeremiah Weed and the response was to brew a batch of ginger beer and add dandilion and burdock cordial with some pimms..

Mine turned out ok, i think!..just moved the bottles to cold prime today after being in room temp for 2 weeks.I will sample some at christmas although i would expect it to be at its best in 3-4 months, if i can leave it alone that long..Gonna try another strong Ginger beer recipe next that is simple and tasty with just DME ,Honey and grated Ginger root.ABV 7/9%. :D
