    It's still 1040 SG. Furthermore, I have the cider in a white plastic beer barrell with a pressure valve, so I can't really see what's happening apart from a lot of froth at the top of the barrel. I've cracked the seal again tonight (after about 24 hours) and it releasing a lot of pressure.

    Fermentation Bin Query

    I'm using a beer barrel to brew cider (my first time). As the barrell had a pressure release value I tightened it up. I gently unscrewed the cap but it foamed up like a good un' once it was mostly untightened.

    Fermenting Cupboard.

    Actually No! A thermostat and a heat lamp used for Vivariums can be purchased from most pet shops. The thermostat will have a dial to set the temperature 18 - 32 oC. The lamp and probe will easily fit into an insulated box as already suggested.

    OK I' ve given in. After reading up about natural brewing being "hit and miss" I got cold feet and decided to add yeast. Seems a waste to gamble with 40 litres of apple juice especially as this is my first batch. Keeping fingers crossed eh!
