    You're probably best going with the "later" reading after any gas bubbles have had the chance to escape and stop sticking to the hydrometer..... Unless of course it's got a leak and is slowly sinking.

    Thanks Stesmi, rotokeg are to the best of my knowledge available in NZ at silly money. I'll stick to bottles, I've thought about Cornykeg, but I'm not in love with fizzy beer. Then there's the temperature control etc etc. I like my brewing like the contents of my head.... Simple.

    First time bottling - do I need to sterilize new bottles?

    Be anal about cleaning. It's heartbreaking is your first, and hopefully last infected brew. Avoid heartbreak at all costs. It takes very few minutes.
