Off flavours... where am I going wrong?

Oh, and I'd best clarify my comment about BIABrewer... I'm not anti BIABrewer in anyway. I just found it dull because what interests me is all the other stuff, people's 3v systems, cider making, wine, yadda, yadda... BIAB for me is a technique to produce the end product, beer. I'm more...

    First AG (BIAB)

Nice one! Welcome to the dark side of the dark side! quote="stuworx"]I originally created the recipe with the Hop Alpha @ 4.6%. After reading the pack during the boil I realised they’re 6.92%. So it’s going to be bitterer than I planned  . ... My mash temperature was 71.7c...

Off flavours... where am I going wrong?

I didn't. You squeeze and haven't noticed anything, I don't squeeze and I'm very happy with my results. Squeezing WILL get you more wort out and thereby will increase your efficiency. I brew 40l BIABs so my process is to pull the bag up as best I can and get it drained to the point where I...

Off flavours... where am I going wrong?

I did but tbh I found it a dry and dull. The basic hypothesis is god enough for me, 3v doesn't compress the mash, just runs liquor through. Not squeezing is making me awesome beer. Why would I start squeezing?

Pull it. Lift it. Drain it. Wash it now and then. Just don't squeeze it...

Never squeeze your bag. That way lies tannins in your beer which gives you unpleasant astringent bitterness. Only ever let your bag drain naturally.

What should I Drink Beer Out Of?

There are two vessels vying for top slot IMO. The drinking horn but they tend to be a little short on capacity. Or The hand-stitched leather tankard. But unless you make it yourself, its just not cool. I have neither. Just a THBF glass tankard. :thumb:

Made Woodforde's Headcracker up to 24 litres not 24 pints

But stand it in one of those big plastic under-bed boxes! There won't be a lot of headspace and that smells like a messy carpet to me... That is the best solution though IMO. Just get another Headcracker and stir it very gently in. That way you just get twice as much Headcracker and that...

    Cake stand for BIAB

Ah, no, don't pull it out! Just pull the opening of the bag down the outside of the pot to lift the bottom of the bag up a bit and secure it. Alternatively, if you have a draw string you could close the bag and pull it to the side which would let you stir...

    Cake stand for BIAB

I guess it depends on how aggressively you heat it. If the heat into the base is less than the dissipation afforded by the wort then you have no problem. you could just pull the bag clear of the bottom while heating to your rest temps...?

    Cake stand for BIAB

You don't have to worry with gas. (caveat: I use a cotton bag, not a nylon)

Stepped BIAB or single infusion cooler?

Both. :) My eventual set up will be a 70l shiny HLT, a 50l shiny thermo mashtun and a 70l shiny boiler. All gas fired. That allows me to BIAB if I want, 3V if I want, BIAB step mash (for Hefeweizen etc it's a must) if I want. Total flexibility in one system. :thumb:

    Decided To Give Up homebrewing

:hat: While our hobby is a very rewarding one, the ability to produce our own potion better and cheaper than the big companies is truly a gift, it comes with it's demons - the ability to produce our own potion better and cheaper than the big companies. It takes a big man to face his demons and...

    Williams Bros.

Oh and if you like Williams Bros beers, you are pretty much guaranteed to like Inveralmond too. Quite similar in style, look out for Lia Fail, Ossian and their new pilsner "Sunburst" (being my three favourites of theirs).
