My wow smells

My wow made following the traditional recipe has fermented been racked, tastes very nice but smells a little vinegary! Ditch it or let it settle?
 
Give it time! It took me ages to realise that what I was smelling as vinegar wasn't, but was actually alcohol and CO2.

The CO2, when it hits your moist nasal membranes dissolves and creates carbonic acid.

Acetobacter infections do happen but are, if you are half ways careful, rare. :thumb:
 
I was careful with the sanitation, I did put tap water in the bubbler a few times. Tasted dry but very interesting
 
Mine took about three months int the bottle to come good. After size it was very nice indeed.
 
The original orange wow is not to everyone's taste and mine was pretty awful when new, it did get better over the next week or two but i never made another.
