    Same here.............I can usually manage to get all the beer out without having to vent the keg. I have a keg of Old Peculier clone ready to drink (might just sample some this evening !)

    Sugar...

    I sometimes add sugar to some higher gravity brews (Belgian style in particular) Doesn't add flavour but increases the alcohol content. Too much sugar, I think would dilute the body and flavour to a noticable degree, but at the quantities you describe I don't think it would make much difference...

    Water treatment question.

    Just seen your post...................We are blessed with good quality water here in Scotland (too much of it at times !) Personally I use it straight from the tap for most types of brew and have never had any issues/off flavours.

    I think an ID card would be very handy in Scotland..................I mean, how many times have you gone out to your car in the morning to find the windscreen covered in frost and you can't find your scraper !

    Priming and Carbonation

    Top tip....................when bottling, use some plastic bottles as well as the usual glass ones(I use the 500ml ones that sparkling water comes in). This enables you to check how carbonation is progressing by feeling how hard the bottles are getting - saves opening bottles and wasting beer !

    I recall many years ago (25+) having a go at a Special Brew (AG) recipe from Dave Line's book "Brewing beers like those you buy". It turned out pretty good and very similar to the real thing. Might give it another go out of pure nostalgia !

    Calculating additional gravity points when racking beer on to sloes

    I tried it last year...............just used a basic pale ale (didn't bother with any calculations) Turned out OK - pretty sharp tasting but refreshing and very drinkable.

    When I bottle beer I always put some in plastic bottles. I can then check the progress of secondary fermentation by feeling how firm the bottles are.
