New World Saison - why so malty?

Me and Clint have both brewed this one too, he liked it I still have 3 bottle left a year later (that's a first ever for me), I think it's maybe the style that I didn't like as with Electric India I loved the first few bottles then suddenly decided it wasn't from me :)

Water treatment - is it important?

I've just started adding an acid blend to my water (I got a water test from brewuk.co.uk that suggested it) as my water is really hard, I brew mostly IPAs and american pales I think it's really helped stopping my beers taste "Home Brewey)

    HOPS ? newbi question

+1 for a SMASH too, I'm just learning all grain and am currently buying a 100g bag of hops (cascade, nelson etc) then using them with about 5kg maris otter extra pale, then using brewers friend to work out timing of adding the hops for my desired bitterness. This way i can get a good feel for...

    Bottle or Capper Issue

+1 for bench capper here too, i+I was breaking bottle necks and all sorts; as a side note I recently brought a box of 24 500ml PET plastic bottles for my "drink at home beers" they are surprisingly good, weigh much less to carry in bulk and I'm not worried about glass grenades :)
