    I'm not the most qualified to answer this question but my main worry would be that boats don't stay level. I wouldn't be keen on 20+ litres of boiling liquid on a surface that could move in any direction at any given moment.

    Using 2 seems like an obvious thing to do, yet it never occurred to me. I wonder if 2 would pull the steam out without the need for some kind of hood. A case of trail and error I suppose.

    I've never done it with those volumes, but it it possible. You'd just need to make sure you've got something big enough to mash the quantity of grain you'd need.
