    Tend to keep on top of hydration and then it just leaves me with the lack of sleep to contend with (nights that end in potential hangovers are usually late ones).     As long as your efficiency is ok in the recipe you should be alright, you'll have got the right amount of sugars from the grains via the mash for your FV volume.     As has been said the closer to use you sanitise the better. I guess if you are able to seal it all up after sanitisation the day before then you shouldn't get any issues. Personally, I sanitise as my wort is cooling and then just before bottling then it's a matter of minutes between sanitisation...

    Oxygen Question

    Aeration of the wort helps the yeast out - they need it to do their thing. After that oxygen is bad due to its impact on the alcohol. I’d say this would therefore apply to cider and wine also as neither of the above statements are specific to beer.

    Thank you all for the help, measured boil off last night and adjusted my equipment profile with that, set efficiency to 60% and grain loss to 1L/kg. Will need further adjustments but I’m in a better position for my next brew.
